Ingredients
For the Chicken
- 1½ lb (700 g) boneless, skinless chicken thighs or breasts
- 2 tablespoons cornstarch
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons cooking oil
For the Sticky Honey Sauce
- ⅓ cup honey
- ¼ cup low-sodium soy sauce
- 2 tablespoons water
- 1 tablespoon rice vinegar or lemon juice
- 3 cloves garlic, finely minced
- 1 teaspoon freshly grated ginger
- 1 teaspoon sesame oil
- ½ teaspoon red pepper flakes, optional
For Garnishing
- 1 tablespoon sesame seeds
- 2 green onions, thinly sliced
- Fresh cilantro, optional
How to Make Sticky Honey Chicken
1. Prepare the Chicken
Pat the chicken dry with paper towels and cut it into bite-sized pieces. Place the chicken in a bowl and season with salt and black pepper. Add the cornstarch and toss until every piece is lightly coated. The cornstarch helps create a lightly crisp exterior and also helps the sauce cling to the chicken.
2. Make the Honey Sauce
In a small bowl, whisk together the honey, soy sauce, water, rice vinegar, minced garlic, ginger, sesame oil, and red pepper flakes if using. Mix until the honey is well incorporated. Set the sauce aside.
3. Cook the Chicken
Heat the cooking oil in a large skillet over medium-high heat. Once hot, add the chicken pieces in a single layer. Avoid overcrowding the pan; cook in batches if necessary.
Cook for about 4–5 minutes per side, turning occasionally, until the chicken is golden on the outside and cooked through. Chicken should reach 165°F (74°C) internally.
4. Add the Sauce
Reduce the heat to medium. Pour the prepared honey sauce into the skillet with the cooked chicken. Stir gently to coat every piece.
Allow the sauce to simmer for approximately 3–5 minutes, stirring frequently. As it heats, the sauce will reduce and become thicker, glossy, and sticky.
5. Let the Sauce Caramelize Slightly
Continue cooking for another minute or two, stirring constantly so the honey sauce doesn’t burn. Once the chicken is beautifully coated and the sauce has reached a thick, sticky consistency, remove the skillet from the heat.
6. Garnish and Serve
Sprinkle the chicken with sesame seeds and sliced green onions. Add fresh cilantro if desired.
Serve immediately over steamed white rice, brown rice, fried rice, or noodles. Steamed broccoli or another favorite vegetable makes an excellent side.
Helpful Tips
- Don’t overcrowd the skillet: Give the chicken enough space to brown properly.
- Use chicken thighs for extra tenderness: Chicken breasts work well too but can cook more quickly.
- Watch the sauce carefully: Honey can burn if cooked over very high heat.
- For extra spice: Add a small amount of red pepper flakes.
- For more garlic flavor: Add another minced garlic clove to the sauce.
- For a thicker sauce: Simmer it slightly longer, stirring constantly.
- For a milder flavor: Reduce or skip the red pepper flakes.

Storage and Reheating
Store leftover chicken in an airtight container in the refrigerator for up to 3–4 days. Reheat gently in a skillet over medium-low heat with a small splash of water to loosen the sauce. You can also reheat it in the microwave in short intervals, stirring between each interval.
